Apple Nachos



October 21st is a day for celebration - it's national apple day, international day of the nacho, and world reptile day! When I saw that, I decided I just HAD to combine the first two and make some delicious apple nachos! (There were no reptiles involved in my apple nachos, but for reptile info and activities, check out my Read and Rise post featuring the story "Verdi" by Janell Cannon.)

These apple nachos are absolutely yumma-licious and reminded me of those crazy caramel-chocolate apples you get from sweet shops or Edible Arrangements. However, they are MUCH easier to make and also easier to eat! Plus you can vary the toppings to use whatever you have on hand (or think is most delicious!).

Apple Nachos

Ingredients:
- 1 or 2 apples
- peanut butter (or other nut butter)
- caramel sauce (or leftover dulce de leche frosting from Halloween Surprise Cupcakes...)
- granola
- mini chocolate chips
- toasted and chopped pecans or walnuts

Directions:
1. Slice apples and arrange on a large plate.
2. Warm a tablespoon or two of peanut butter in a microwave in 10 second increments until it is pourable. Do the same with the caramel sauce.
3. Drizzle peanut butter and caramel over the apple slices.
4. Sprinkle granola, chocolate chips, and toasted nuts on top.
5. Find a few people to share your apple nachos with so you don't eat the entire plate yourself!
